nitially scheduled for Easter, the official opening of Pressoria, the Champagne Wine Centre for Sensory Interpretation, will take place on Friday 2 July in Aÿ. 10,000 visitors are expected at the centre from July to December. Once the pandemic is over for good, the wine tourism platform has set a target of 40,000 visitors per year. 11 million euros and 18 months’ work were needed to convert the former Pommery winery.

Pressoria houses a ten-room tour that lasts an hour and a half and describes the production stages of Champagne’s sparkling wines. One of its hallmark features is that it calls on visitors’ five senses “to transport them from “the earth to the bubble”, with the help of smart technological processes”, says a press release, which also specifies that “the visit ends with a tasting of Champagne or grape juice overlooking the historic hillsides”. With support from the greater Marne valley authorities, the wine tourism venue will be open from Fridays to Wednesdays, from 9.30 am to 6.30 pm in season (1 April-31 October).
